Among the gourmet products that reach the main restaurants in the world, the truffle is, without a doubt, one of the most valued, appreciated and respected by chefs.

The region of Castilla y León, especially the province of Soria, stands out for its extensive mountainous spaces where wild truffles have always been present. However, it currently distinguishes itself in this aspect, particularly for its fully operational plantations of black truffles. In fact, one of its municipalities, Villaciervos, hosts the world’s largest truffle cultivation estate, spanning over 600 hectares of holm oaks. Overall, Soria, as well as other provinces in Castilla y León such as Burgos, Valladolid, Segovia, or Palencia, significantly contribute to the national production of this precious fungus. The soil characteristics and altitude favor production, along with ideal maturation, highlighting its visual and organoleptic qualities.

In the last few years, the Government of Castilla y León has given significant visibility to mycological products, continuously promoting them nationally and internationally. This has been achieved through events such as the International Congress of Cuisine and Mycological Tourism of Castilla y León “Soria Gastronómica,” the “Buscasetas” (Mushroom Hunting Days), and the organization of the International Competition “Cooking with Truffle,” celebrating its fourth edition once again in the city of Soria.

This event will feature the participation of prominent international chefs, supported and assisted by chefs from eight local restaurants who will sponsor them and offer the contest dishes on their menus for diners to taste and enjoy.

As a novelty, the competition will include a popular jury that will award the fourth prize, while the panel of professional judges will be composed, as in previous editions, by experts in gastronomy, journalists, and chefs.

The event will take place from February 5th to 11th, 2024, with the competition session scheduled for the morning of Saturday, February 10th, at the Cultural Center Palacio de la Audiencia in Soria.
